We first ranked the 50 best restaurants in Dallas in 2011. Since then, the scene has changed so rapidly that it’s required us update it every three months. Which is what we’re now doing.
Deep Ellum nightlife fixture Jon Daniel knows this. That’s why, when his kids were growing up, he would take them to independent, family-owned taquerias around Dallas to introduce them to the magic of al pastor, bistek and barbacoa.
The habanero pepper — one of the hottest chile varieties — is the signature chile of the Yucatan. “It has a nice kick to it, so it’s often accompanied by something sweet,” says chef Rojas. At Revolver Taco, Rojas slips habanero bits into a Yucatecan-style ceviche, taming its firepower with juicy bits of orange.
It’s worth bringing enough friends to this Deep Ellum taco joint that you can order the whole menu. But if you must choose, go for the one filled with Michoacán octopus “carnitas”: slow-cooked, crisped with butter on the flat-top grill, and served in a tortilla with fried leek and jalapeño salsa.

There are carts that griddle in the open breeze, squiggle them with mustard and pile on butter-soft onions while we’re gasping for hot dog air.
The taqueria menu is served all day, with taco choices from carne asada, shrimp, squash and lobster to rib-eye, octopus and duck.
Revolver’s variety is astonishing, so you’ll want to bring friends along to also order the exquisite pulpo tacos (sautéed octopus layered with pan-fried leek and topped with a velvety jalapeño salsa), huitlacoche tacos (dark and dusky corn fungus)
It’s difficult to select a favorite taco at Revolver Taco Lounge. The duck, a medium-rare slice of breast with a band of fat that is augmented with sautéed onion and a slice of roasted poblano alongside deep tomatillo-chile de árbol salsa
