LA Resistencia is the new Revolver Taco Lounge Taco tasting experience where chef Regino Rojas and his family will present you with a specialty Mexican gourmet taco Experience. Featuring a six course prix fixe chefs tasting menu for $80. We searched the remote areas of Mexico looking for the ancient corn better known as maiz milpero “heirloom corn”. The same corn that has been feeding mexican indigineous communities for thousands of years. This corn is still being produced today by small farms run by indigenous families in the state of Oaxaca, Michoacan and other states. We are so proud to support them and bring this corn to LA Resistencia and produce our own nixtamal so we can follow the tradition of making a handmade corn tortilla just the way our ancestors intended it to be. Chef Regino Rojas has created a variety of tacos of which he will be cooking the proteins such as meat, fish and vegetables using an ancient wood grilling technique using a Japanese Yakitori grill to create a traditional Mexican rendition in Tacos such as Pescado Zarandeado, Carne Asada, Roasted Mushrooms to mention some. The result is an incredible, unique and full of flavor taco. In addition to our chef tasting menu we will serve some of our fan favorites such as Juanitas traditional Mole Michoacano with pheasant, our award winning traditional Michocan style Birria.
LA Resistencia is by reservation only and we seat 8 people per seating following all state regulations for COVID19 so we provide you with a safe comfortable atmosphere.
